No two oysters are alike. Size, colour, texture, smell and taste can all be greatly affected depending on the area in which they are grown, the growing techniques (such as tray and beach cultured), and the types of plankton they feed on.

WHERE DOES CURIOUS OYSTER GET THEIR OYSTERS?
With the help of our good friend, Joshua, and the team at the Whalesbone Oyster House in Ottawa, we were able to establish a relationship with oyster farmers on the west and east coasts. This gives us the amazing opportunity to source oysters from different regions. Because they are hand-harvested upon request, then shipped directly to us for your event, all our oysters are as fresh as possible.

Our oysters are also Ocean-Wise Certified.

WHAT MAKES CANADIAN OYSTERS SO UNIQUE?
Canadian oyster are among the best oysters in the world. Slower growing than warm water oysters, ours have the time to mature. The cold water keeps them compact and firm, deepening their flavour.

There are four species that are grown in the pristine Canadian waters:
Eastern (Crassostrea virginica) - large, firm, briny
Pacific (Crassostrea gigas) – large, soft, sweet, with cucumber notes
Kumamoto (Crassostrea sikamea) – small, creamy, with hints of melon
Olympia (Ostrea conchaphila) – tiny, coppery, and smoky
